What's your signature dish?

I actually have a few signature dishes - if friends from Asia are visiting, then it's a dry brined, reverse seared T bone or ribeye, with roasted brussel sprouts


If I'm entertaining, this blows people away (Susur Lee in Toronto calls it Singapore Slaw) - I do add some other local veges for color and texture:


If someone is staying overnight and I'm up to it, then it's deep pocket Belgian waffles. I have a restaurant grade waffle maker and it absolutely makes a huge difference.

Back in the University days which was a long time ago, my go to was a classic Sukiyaki using a new york strip mild green peppers and a pearl rice, finished with a store bought dessert. Expectations were pretty low so just the fact I had a clean basement suite and could actually cook seemed to wow my gal of the moment! I seem to recall we tended to drink a lot of Southern Comfort back then instead of wine with the meal ...

Today its more a matter of vegetarian vs meat/fish of any kind which changes things a lot. But. if seafood is in the mix, I do a pretty mean BBQ wok-ed Louisiana hot sauce soaked prawn dish adding a dash of lime, with a lot of wood chips smoking in the smoker tray. Cooked under the lid in the last 5 or so minutes with board cooked julienned veges served with a jasmine or basmati rice that has been sautéed in garlic butter with scallions before cooking in a stock. My deserts have changed a lot too but I find very simple and small seems to be a nicer touch so baked apple rings in a cinnamon brown sugar sauce with a dollop of whipped cream finishes the dinner. Or my baked bananas with a rum sauce and if vanilla ice cream is in the freezer, well that gets a scoop or two.

This can be pre or post the main meal which of course is what we all are adding into the evening here :).

My panty remover meal is,

Bbq beef tenderloin steak marinated in a soy sauce, cooking sherry, worchestershire sauce and minced garlic mixture.

Saffron and white wine mussels ( I get them from the lobster man on Granville island )

Baked zucchini sprinkled with freshly grated Parmesan cheese

After dinner a coffee with brandy to go along with blueberry cinnamon coffee cake

I feel like we all have that one dish we cook to impress someone. You know, the first time you cook for a lover, and you want them to be taken by you? Eating together is so sensual, and I definitely enjoy showing my attraction for someone through feeding them food I've cooked.

My go-to "impress them" dish is coconut Thai mussels.

It used to be coconut crusted halibut filets with a coconut pan sauce. Since going vegetarian I don't know if I really have one... I love cooking for people but I don't really have a specific dish. Green curry with tofu and vegetables usually seems to go over well.

A nice cut of steak cooked in a cast iron pan with a side of roasted vegetables or salad and a couple slices of garlic toast.

Reverse seared Rib eye, sauce bernaise, chanterelles simmered in butter and deglazed with 3 parts pino grigio and 1 part vermouth, finely chopped greek salad with fresh crumbled feta and artisanal olive oil, french baguette style grated cheese garlic bread on the side. And a fine cabernet or shiraz served in really big fuking glasses!

I like to make pasta dishes with salad and bread. I pick up the pasta from Puccini’s on Lonsdale. They’ve got a great deli section and sell unbaked pizza crusts that are amazing. Seriously, you have to phone ahead to reserve some.

Linguine Vongole simple to make as long as you take your time. Mussels, clams and chopped humbolt squid is what I like to put in - give or take. Clams alone is excellent too.

Serve it up with a bufala salad, crusty Italian bread and a Pinot Grigio. Simple to make and is not a lot of effort.

Lintels in bottom of a sauce pan with two-thirds cup water. On top, mixed fresh vegetables cut small with a paring knife. Medium heat 10 minutes. Coaxed into a bowl of tomato sauce, lemon juice, crushed sardine, raw onion and canola. Slide in fork, lift sauce up through vegetables. 5 ml vinegar in water to drink. Carob, sunflower seeds, banana for dessert. Nutrition, minimal preparation, delicious.

Briskett. Almost bought a lovely big chunk o meat at Save On Foods. And then I got sad. A lot of work..no one to share it with. I bought a loaf of bread and pb instead.
