If your SO tells you she's glad you are willing/able to stuff the turkey, because she's a bit squeamish about it.....don't tell you actually like doing that because it's like fisting.

major improvement, also takes less than half the time to cook when you fry

have to do the stuffing outside the bird in tinfoil (in oven)

buy extra turkey drumsticks and do in the oven for pan drippings for the gravy

let the bird rest for at least one hour after cooking before cutting/serving

the brine makes the bird far more juicy and flavorful

well worth the trouble

Wow, great tips everyone, thanks for sharing.
A friend of mine has a commercial sized oven in his home. He once entertained his Management Team from his office with a home cooked Thanksgiving dinner.
Apparently, his turkey dinner is still talked about years after the fact. His method? He covered the turkey with a massive pork rind before placing it into the oven.

Turkey was amazing. Going to make a broth with the left overs. Going to freeze it, so if I get the sniffles this winter, I have the perfect remedy. Yum. Dog loves her left overs too!
