I asked about this at a store recently. I was told that you can't buy a phone and say 500 texts anymore. Pay as you go is now a month to month thing. If I'm wrong then please let me know because id also like a burner

I recently had to get a new one and pretty much this is the process:
1)Go to a store that sells one of the one. Feel free to shop around but pretty much any London Drugs, Best Buy, etc. will sell you one.
2) Once there, ask for an unlocked pre-paid phone. If they bother to ask you why, make it up: Tell them it is for a friend from a 3rd world country visiting or something on those lines. To make things even less trace-able, pay cash.
3) Once you have the phone, inquire about the plans and get the SIM card associated to the carrier. 7-11 SpeakOut has been a popular option mentioned several times. As several people have pointed out, you don't really need data, only voice and text. If you really need data, walk close to a Starbucks and piggyback on their wi-fi.

Buy a sim card and speak-out mins from 7-11, mins last for 1 year from date of purchase.
ie: buy $25.00 or whatever you want , worth of time, use it for texting or voice. Depending on how much you use it - the dollar value is good for 1 year from date of purchase.
Comes with Voicemail too.
