In a nice wet pussy!
Before you can achieve commercial quality grade non-stick pans, you have to pay ten times what you would for cast irons equivalents of the same grade. And Teflon, for all its advantages, just doesn't stand up to the rough going, over time, as in a restaurant kitchen. Cast iron pans retain heat better, and when making up ten entrees in a short time span, using the same pan, you don't want to wait around for the quick heat release aluminum or stainless steel equivalents to come up to speed, or warp themselves useless waiting either...

The same can also be said for woks.
