crank it up at 500 and it should take 1/2 the time to cook.

Keep heat at 350 or below. At 20 minutes a pound ... it probably will be done in less time than 2 hours. Even less time if it is in a convection oven? I would turn the heat down to 275-300 half way through and bake it a little longer. You really should have a meat thermometer to get it just right (190 degrees internal for turkey or chicken). Broil for the last 5 minutes to brown. Just my 2 cents.

Beer Butt Chicken

Hey Lonely do a search on the net for Beer Butt Chicken and try it next time. Usually will take about an hour and a half. The beer will leave the chicken extremely tender and moist. Looks weird but taste great.

I wouldnt recommend cooking the chicken with the stuffing inside the cavity. It takes a long time for the heat to get to the interior so the stuffing will either be undone (ie. could have samonella from the chicken because its not cooked enough), or the chicken will be overcooked by the time the stuffing is done.

Cook the stuffing seperately.

Roast the chicken at 500F for about 20 minutes
Baste it with it's own juices
Cook for another 7-8 minutes
Baste again
Turn the oven down to 325 and cook for about 30 minutes.

Use the roasting pan drippings to make gravy.

I would assume that Lonely is putting the onion and garlic into the cavity to give the chicken extra flavor, same concept as putting a cut up lemon into the cavity.

It might take a little less than 2 hours, make a small cut where the leg meets the body, if the juices run clear its cooked through, if they are pink put it back in.

25 Lb Turkey

No, 4 hrs won't cut it. At 325 degrees, a 25 lb bird (stuffed) should take about 9 hrs (22 minutes per lb). If it is unstuffed you can deduct 5 minutes per lb.

Rub the skin with a little olive oil and cover the bird loosely with aluminium foil until the last hour or so. Pour off the grease from time to time and baste the bird with some of the drippings to keep it moist. Enjoy!

25 lb Turkey

That is one big turkey. You should allow about 6 hours. Usually that big you allow 15 mins/lb. But a meat thermometer can't be beat. It will probably take a bit less and cook fast towards the end. So maybe a bit less than 6.....

two hours and still not done ... should have mentioned that it was covered with tin foil and it is looking and smelling great!

but i did test a leg on the bird and its not there yet ... so took off the foil and will let it go another half hour.

and the only 'stuffing' i have ever put in a bird are onions and garlic ... makes for a very juicy bird when done (even if you have to leave it in the oven a bit longer.

thanks everyone for the cooking advice!

:)

Just start a big campfire and throw it right in the middle, take it out, and clean up all the ashes... should still be good :).
