Why would Subban making reference to her obvious dietary proclivities that resulted in her morbid obesity be offensive to her, or anyone else?

Ignoring an unhealthy lifestyle because the person doesn't care about their own health doesn't make it disappear. Anyway, he didn't mock her, just used her as a reference for something large, which she does herself.
