I don't understand the logic/reasoning behind the process of moving a jigsaw type piece into place to find the SP's ph # or email address?

It's not like cracking a secret code...unless they wish to disqualify guys who have hand-tremors, which I doubt.

About a year ago there were squares with about 9 photos and you had to check ones with stoplights for example, equally odd.

maybe I'm missing something here?

It's to stop bots from scraping the site for numbers and then using that to do scams. There have been a lot of attempts to scam SPs with phishing attempts.
