I gotta go with Oreo's.Two bits of cookie and an addictive cream centre.Cripes the Oreo cookie has even be woven into plots of films.Best example I can think of is Rounders....." do you want a cookie?"

I just cant fathom how another GEN X'er has not pointed this out.Oreo cookies were the treat in the lunchbox when I was a kid.

Here you are, miss H, the world's easiest, and most adaptable, cookie recipe.
1 cup peanut butter, creamy or crunchy
3/4 cup light brown sugar, packed
1 egg
1 tsp vanilla
1 tsp baking soda

Whip first four ingredients in a mixer on medium until creamed( no longer grainy )
Add baking soda and mix well
Scoop 1 tbsp balls 2 in apart onto baking sheet, flatten with fork
Chill 2 hours (very important)
Bake at 350 for about ten mins, rotate tray at halfway point
Let cool on tray until manageable

For the more health concious, use natural peanut butter + 1/2 tsp salt and replace brown sugar with coconut sugar.
For vegans replace egg with a flax egg (1 tbsp ground flax seed + 3 tbsp water combined and set for 15 mins)
If doing the vegan version, do not chill dough

Other nut butters may be substituted but the texture will be hit or miss, depending on fat content.
I some times roll the scooped balls in sugar or cinnamon sugar before baking or add 1/2 cup chopped, salted, roasted peanuts

No vegan version for me though.. I’m a happy omnivore.

My mother's chocolate chip oatmeal cookies. She uses dark chocolate chips and also adds unsweetened coconut flakes to them. She has never given me the full recipe, though she claims she has ... but it's never the same whenever I've made them.

My pleasure. Please let me know how they turn out, I have not tried the monk fruit sweetener. Very curious as to texture and aftertaste.

They turned out well. I just ate 2 of them.
I find the texture and taste to be very close to coconut sugar. I don’t notice any aftertaste.

Excellent. Timing is always an issue as everyone has a different oven. Did they come out crispy around the edges and soft, somewhat candy like in the center? I hope so, that is when they are at their best.

I added time, I know my oven well, she always needs a bit more time than a recipe calls for. The cookies turned out perfect.
