this is a nice recipe I use and easy to make:
buy some chicken ... thighs are good ... can be skinned/de-boned or not.
buy some of the following:
leeks
white or red onion
potatoes
frozen peas
carrots
preheat frying pan or grill
fry chicken, both sides, until done -- you can use whatever spices and salt you want on the chicken -- I like Kraft Sundried Tomato and Oregano Collection Series Salad Dressing ... just the right amount of spice and seasoning (20-30 minutes total)
while that's cooking
wash all the veggies except onion
with the leeks, you will have to toss outer layer and take the rest apart to get the dirt out.
cut up everything to a size you like
put about 2 quarts ... 3 litres of water to boil NO SALT just water.
add potatoes, carrots, leeks and onions ... turn down heat to a simmer and cover.
let cook for about 20 minutes or until things are starting to get soft.
add peas and make sure it keeps simmering
while that is happening, remove skin from chicken (if necessary) and remove from bone (if necessary) and chop up.
when the veggies just start getting nice and cooked, add the fried chicken
and now add the salt and any spices you like.
let simmer for another 20 minutes or so or until the leeks are throroughly cooked.
this stuff does freeze very well and always tastes better the next day ...
