CHICKEN PAPRIKA
From: Frugal Feasts, p.106
Serves: 1

Ingredients
1 tablespoon butter
1 tablespoon vegetable oil
1 medium onion, chopped
1 tablespoon paprika (preferably Hungarian)
1 skinless chicken breast or leg with thigh attached
½ green pepper, sliced
1 medium tomato, chopped
½ cup water
Sour cream (optional)

Directions
1. In frying pan, melt butter and oil over medium-low heat. Add onion and cook for 2 minutes or until soft. Stir in paprika.

2. Add chicken to pan and sauté for 5 to 6 minutes per side over medium heat. Stir in green pepper, tomato, and water. Cover pan, reduce heat to low and simmer for 10 to 15 minutes or until chicken is tender and no longer pink inside.

3. Remove chicken and vegetables with a slotted spoon and place on a warm plate. Bring liquid in pan to a boil and let bubble for 1 minute. Spoon over chicken and vegetables. Serve with a dollop or sour cream, if desired.
