Best way to cook food

Hi All,

I got a Sous Vide machine for a really good price.

What is best way to cook food in your opinion?

I have a propane bbq but haven't used it years since I switched to charcoal (better taste in my opinion)

Pellet smoker which I have

Oven

Slow cooker

Pressure cooker

Cast iron skillet

Other methods?

We do mostly salmon and chicken.

I like my big green egg, or cast iron frying pan on stove top, but also my heavy weight dutch oven pot in the oven makes for a great roast etc

I do different things for different foods. I'm actually about to break in my new charcoal barbecue tomorrow by doing a round of burgers.

Board cook your salmon and chicken.
Swap out different kinds of wood, alder, cedar, apple, cherry.
Been doing it for years on my gas grill, never disappointed.

Charcoal with a cast iron grill. A little hard wood for flavour. Mmmm

I forgot about the air fryer, have one too.

Trying out the sous vide for the first time tonight.

Let you know how it turns out :) there is always delivery pizza if I screw up hahaha

Almost everything in my air fryer , I even toast my bread in it, warm up pizza etc...

I don't have one, but sounds like a worthwhile purchase.

Is there any particular one that is best to buy, or just any air fryer?

If you are doing sous vide, it will delicately warm your meat to a grey sewer-lining like look and texture. Sure, warm the center up a bit, and then throw the fucker on a propper hot bbq or cast iron pan and for god’s sake, reverse sear both sides for a couple of minutes with high heat, tongs thrust upward in the air, and please bring on the massive bravado of culinary victory, and a maniacal laugh full of ATTITUDE. And don’t underseason the meat, or your ass will be chopped! 🪓

Okay, tried my sous vide for the first time and finish with a cast iron pan to get a crust all around.

Review is good but doesn't have that charcoal taste which I like.

So next time try sous vide with charcoal grill finish.

I sous vide all of my meat before finishing it via One of the other options.

You absolutely can’t go wrong with a sous vide. It will be cooked to 100% perfection every time. Then you just throw it on the barbecue, pop it on a cast-iron into the oven, Or cook it on high heat for a minute on the stove top to create the crispy texture and perfectly browned aesthetic.

Bought zip lock freezer bags but I see that sous vide user's on youtube using a vacuum sealer and sealer bags.

Will it make a difference freezer bags vs vacuum bags?

I inherited cast iron pans and a Dutch oven from my grandmother nothing even comes close.
I have a cast iron skillet my mother gave me when I moved out of the house decades ago. Her mother gave it to her so it has to be about 130 years old maybe older. I did a deep dive many years back on conditioning cast iron cook ware and this particular fry pan is a marvel when it comes to stove top or oven cooking. It literally acts like a no stick teflon pan!.

The secret is NEVER let soap touch it. NEVER. Use salt as a medium to scrub it. Add oil or a bit of bacon fat to help the salt work every part of the pan. Rinse in water, wipe dry then a wipe with another oil - I swap out bacon for olive oil and coconut oil, rotating every few weeks.

Same for my dutch ovens which are much more modern.

Since I'm on the cast iron soap box and if you want to be entertained by a cowboy cook who pretty much exclusively cooks with cast iron, check our Kent Rollins on youtube. A master of the chuckwagon, dutch ovens and trivets but be warned, a very high number of his recipes are caloric so if you are working towards a calorie deficit, sort through his offerings but on the other side, my god this is some of the tastiest stuff I've ever cooked.
