Anyone tried smoking big batches of onoins before on the bbq? I want to portoin and freeze them as a quick side. What kind of wood do you think works best?

Never tried it, but I know from watching the Food Network they say to use a wood that is not full of resin (eg., spruce). If you want to play it safe, I would go with a wood you've seen used to smoke some of the foods you see in the grocery store, like cedar, maple, applewood, or cherrywood. Sounds yummy.

I find in my smoker that less smoke the better when doing veggies. I use a neutral wood such as applewood that has a natural sweetness and doesn't overpower the meat or veggies.

An alternate which pairs nicely with fish is alder. Only tried it once.

I save hickory for dark red meat like brisket.

Changed for you maybe LOL.....for a very long period of time I was part of the Sugarland Supper Club....myself and another pooner (now retired) took great delight in making dinner for SugarK and her Sugarlings...tis how I perfected my souvlaki recipe and also expanded my culinary skills.....and I will say there is nothing like the gratitude expressed by a hot young asian gal when she is presented with an exotic meal......moreso if you saw her the day before.....I so miss making/creating dinner for the Sugarlings as they were so appreciative.

Alder is a great choice for that and if you want to get creative use half and half Alder and Cherry. Hickory in my opinion is very over powering

I'm a pellet head so i'm trying to find diff flavors of pellets. Can't use chips.
I'd have to go out to coquitlam to the bbq store to get the traegar brand, was hoping for something bit closer to DT.
Nothing beats pellets for controlled long smokes. I did a 16 hour brisket and was the hit of my potluck group.
