in short stay away from the bison thing. miserable mean creatures that will trash anything in their way man , machine horse they don't mind . i have to say that the grass fed finished debate strikes me as one of those new things that people just discovered. being in Saskatchewan we are still eating grass grazed and didn't really get past that . before anyone gets jealous we are still in the 1890s on most other issues as well. i confess I am not fussy , finished beef , barley , oats, corn , silage , grass, as long as its good , prepared well and served with the beverage of the day thats all we need. I am partial to great plains grass raising . the bc stuff is too wet for me .

Yeah I'll avoid Buffalo.
I'm in a arid part of the province, but down toward vancouver the grass will give a wet or pungent taste for sure, Your right on the mark about that.
With the timber grass, or pine grass I've gotta be careful to move them onto something wetter to not give them that "Toothpick" taste.

Well, I have an urban acreage now, and I have beds to be tilled..sybian I'll take some grass-fed manure to grow my organic veggies to eat on the side with the grass-fed steaks, blue rare! ;D

Tell you what...I'll go into the alpine, and very shortly ,there will be the wild onions to harvest, and crowberry, and some pine mushrooms.That will be about as organic as you'll ever get.
I suppose I never mentioned that I'm told I can cook with the best of them.
You let me handle the preparing the meal...I love cooking when a young lady is in my company.
I just gotta figure out how to not cook those steaks without my Red Wine marinate, and the mushrooms without Brandy..But I'll manage just fine.

I eat foods cooked with alcohol! The intoxicating spirit cooks off (mostly...LOL) A red wine marinated steak with brandied mushrooms sounds delightful!!

I know they are calmer in their temperment, but I've heard that there can be some reproductive issues, but thats just something I've heard in passing, so I don't know if thats entirley true.
Honestly.. I don't know to much about them, but I've had it several times , and it was good quality.

Well, what an interesting thread

It seems that if your beef is indeed available from Granville Island butchers or some of our finer steakhouses in Vancouver, then I have enjoyed your beef immensely. My most memorable cut was a 48oz bone in ribeye that I brought to a BBQ last year. Took me two hours to eat it and a bottle of wine to wash it down, but thanks, from the bottom of my heart... or in this case, my stomach.
