A Cowboy's Beef

I suppose it may be time to introduce myself....I am Sy, and I'm a Cattle Rancher.
Over a decade ago I got back wounded pretty bad from fighting someone elses War, and walked back on a 400 acre property that I'd bought as a younger man. I picked up an axe and saw, and figured I'd build myself a home, because I was tired of getting shot at.
This country I'm in, rises from 3200 feet ,into my open range to 5500 feet. My grazeland has never been sprayed or plowed, and raises some of the best grass fed beef on the planet. The wild grasses grown in the high country is alkilie resistant, meaning the grass will have a higher content of natural salt.
So the pine grass, bunch grass, and alfalfa has a way of growing better tasteing red meat than a commercial feed lot.
All the ranches around here use some Government Range Lease, meaning we must mark, or brand our cattle and horses ,to prove ownership. There is always conflict over range, water, or cattle.
I live a life of black and white..No phones, no mail delivery, no street lights, no cabs or buses, and not many fences or women....Hell it's a 200 kilometer trip to get groceries.
I have a corner of land on my very large acerage thats about 100 acres, that is fed by underground springs, and irrigates the sweet grass underground.
I'll push the 50 cows onto it with my horses, and they usually stay there for the summer...I then select a few dozen cows and ship them to Cherry Creek slaughter house and sell the beef ,cut and wrapped to private clients, and high end restaraunts down in Vancouver.This is the product you might see in the Granville Street restaurants, or selling in Granville Island farmers market as "GrassFed"

I live a peaceful simple life ...and I'd like more of you Vancouver people to eat beef....I mean shit, I'm just trying to make a living, so I can afford to buy some store bought bacon.

Well if you trained horses ,we may have run into each other at a clinic or two.
I have many wild horses in my area, and just today went up the backtrails with some hay to get them through the winter.
They favour a small meadow to avoid the wolves. I have two wild stock in my Remuda.

I'm not the brightest bulb glowing in the barn at times Miss Melody.......You can sample my beef anytime you'd like.
..And Miss Tanya I try to raise them as stress free and as natural as possible....I almost always make "Canadian AAA" everytime without the use of grains to finish them.
We'll hang them to tender them up for about 14 days, then cut and wrap.....
Costco ,...which is still damn fine beef, sends an electric high voltage shock through the carcass to release an enzyme to simulate hanging. That process gives the product a longer shelf life as well.

I've been offered a herd of Buffalo a few years back, they figured my place was big enough to raise them.
The problem with Buffalo is they are tough on your fences, you have to use railway ties for posts, and they'll just walk through barbed wire. We can only use the Government rangelands for the summer, if your stock is on it when they aren't supposed to be ,you get fined.
The owners of those aluminum cattle liners HATE hauling them as well, the Buffalo just hook a horn into one of those holes, and rip it open like a tin can.
I helped feed out some hay once to a herd of them in the back of a pick-up truck, the Rancher was yelling "Fork out the hay faster!" I guess I wasn't feeding them fast enough, and a big bull hooked his horn under a bumper, and lifted one end of a 4000 pound truck.
I have a tremendous respect for those animals.

On one my trips to the Yukon, I slowly and carefully drove through a herd of free range buffalo that were roaming all over the highway. I stopped to take some pics and was in awe of their sheer size and strength!

I had a 'pulled bison burger' on a ranch somewhere in the states and it was delicious!

But don't talk about it too much... I love animal so so much, but the VanVegans make me feel a bit guilty lol

Well sy, I'm convinced...I've already told you to park yer boots under my bed anytime! You just bring me a packet of beautifully marbled steaks for the 'q and we'll enjoy getting to know each other while they marinate! ;D

Well Miss Melody....You've answered the question that I never asked here.
What you stated is what almost all of my clients say...Humane raising, no pesticides. no drugs unless the animal is sick, and a natural clean environment ,that's as stress free as possible...That is if the wolves stay away.

Well I don't know shit about living in a city.
The prices up here have climbed a lot over the last few years. There is a Investment Company buying all big ranches out of Ontario. It's to the point now that a Rancher cannot afford to expand his outfit.
Although small lakefront lots have seen a slight drop in price.I don't pay much attention to those prices ,as I don't want neighbors...Or maybe they don't want me?

Okanagan Boy here too, enjoyed riding when I was young, we had horses on the farm, they had jobs, but they were also awesome companions!

and I LOVE BEEF LOL

A man after my own heart :) I grew up in the Okanagan. I'm very much a horse girl, in fact I used to train professionally :)

I wish we had more grass fed beef available in the lower mainland, I'm moving up near you for school and would love to get some beef from you when I do :)

Great thread Sybian. South of Kamloops about half way to Vernon is some of the nicest country in BC IMHO. Also some of the best grass fed beef is from those parts too.

I'm a huge BBQ fanatic who supports BC products whenever possible. Tomorrow night when I'm cutting into that ribeye I will hope it supports you as well.
