As the title suggests I have yet the figure out how to book ‘extras’

I asked one time mid-act - that was awkward- particularly when she wanted the $$$ prior to proceeding. I totally get it, but talk about a mood killer ...

If I am dealing with a handler, do I state up front that I want X, Y, Z?
Particularly useful to know when you and the SP don’t speak the same language :)

Be upfront with what you want, there's really no big secret. As you text the handler, tally up all they offer and reply back with a grand total amount you're willing to pay. They agree, you agree. Done deal.

I am a bit confused by your question. If you are looking for extras on the side you should be straight forward with your waitress.

For instance yesterday when ordering my philly cheese steak I asked "Can I get an extra side of fries with my order. I am not really into the salads so would it be possible to substitute the side salad for some extra pommes frites?

If you go to a restaurant not knowing the menu, don't expect the extras to be free or cheap if you are in the middle of the meal looking for more. You place an order before you start eating or the tips may cost more than the main course. Alla carte is always the best option. Don't be an idiot.

Oh I think I know the menu going in, I just don’t always know what I want for desert:)
