Why don't you call them and ask if they will be sending you a tax receipt?
You can claim whatever you want but if the CRA wants to audit you, you have to produce the docs otherwise you get a bit red dot that says audit me next year and the year after that until you prematurely lose all your hair. Then they audit you some more.
Ah...the joys.
I am not a tax expert, but heck right now I feel like asking you how much you donated, and I will claim it on my taxes!!!

Do you have a cancelled cheque? Use that for now when you file, but start yelling at them to send you a duplicate receipt for your files.
Technically, you don't require the receipt to file your return, you only need it if you get audited.
So call the organization, make sure they can confirm your $ amount, have them send you a copy and then file your return, but you don't have to wait for the copy of the receipt in order to file, you just need to be sure that one is coming your way.
