What is the best city in Canada for this hobby?

I had a taste of Montreal. My impression is that there's more diversity + SPs have wider menus + rates are a bit cheaper. Vancouver does have "import" agencies with a steady pipeline of seasoned ladies from CN/KR/JP, I don't think there are many equivalents to the likes of XDS/K604/DN/etc. there.

I liked Montreal but haven’t been there in years.
Very active scene but you must do your homework on MERB.

Going by what you read across the boards, Montreal comes up again and again, like FightingIrish and westwoody say, and MERB is where the homework is. Toronto is the other big one on sheer numbers, TERB alone tells you that. For variety per square km those two are hard to beat.

That's what I thought at first but I had a couple of great experiences while I was there.

Overall I'd say Toronto. It has the largest number of agencies by far, and numerous indy's to suit any taste. Also a wide variety of ethnicities, body types and services including several Kink and BDSM providers.

Rates are similar to YVR, perhaps a bit higher on the upper end of the market, with many of the countries most "elite" ladies based there. Booking procedures are pretty standard but like anywhere there may be some agencies with some quirks.

Montreal was my intro to the world of escorts but it is second place for me. Sadly it's is having some major issues lately, with 2 of the most well established agencies having recently been shut down in LE operations. This has thrown things into a bit of upheaval. Tread carefully.

As DD says above, TERB and MERB are your friends. I'm most familiar with TERB and you'll find some long time guys on there with good insights and advice.

I'm going to say Montreal followed very closely by Toronto. What tips it to Montreal for me is the lower cost compared to Toronto.
