Ya have to like what looked like it was going to be the big sword fight in the first Indiana Jones, where he just shoots the guy... Apparently the guy with the sword had practiced for weeks for the big fight scene and Herrison Ford just did that as a Joke after about take #10 and they kept it..

The ending sequence in Fellowship of the Ring where the orcs are running down hill towards the hobbits and Boromir, and the other fellowship members are in pursuit. The scene was filmed using a moving overhead camera and captured the excitement of the chase perfectly.
