How soon after an unsafe activity will testing be accurate. I understand that HIV often doesn't show up in tests for 3 months. What about Syphillis? Hepatitis B?

The time it takes for the test to be accurate depends on the type of infection.

For example if an activity happened to you and you are concerned about being infected, it would take the following time period for infections to show up on a test.

Gonorrhea and chlamydia would show up after one week in a test (swab or urine sample).

Syphilis (blood test) would usually show positive by 6 wks but can take as long as 3 months.

HIV (blood test) 97% of people would test positive within 3 months and everyone within 6 months.

Hepatitis B (blood Test) would usually show up in 6 months and on average within 3 months. If you have been vaccinated for hepatitis B (a course of 3 shots over 6 months) you do not needed to be tested for it.
