I tried Tojo's couple times and I have mixed experience with it. The first time I went there I ordered omakase which was a truly awesome experience! When I went there last month, the food did not live up to the fame of the restaurant. I ordered some kind of rolls, but the problem was the rice crumpled into pieces when I picked it up with the chopsticks. I was left feeling very disappointed because that is not supposed to happen in a top notch Japanese restaurant.
The one that I frequent the most is Aki (in a basement on Thurlow near McDonald's) and I find their food to be fairly consistent and inexpensive compare to Tojo's prices. I also visited Guu on Robson and Hapa, but didn't like their styles too much. Both of these restaurant put way too much 'special house sauce' in the sashimi which killed the flavour of the fish. I find their sashimi not to be in the freshest form either. One of my new favourite is the little sushi bar near the entrance of Sandbar. I love the texture of their sushi. The rice is soft on the outside and chewy inside, which reminds me the kind of sushi that I had in Japan. The only drawback of the restaurant was the limited selection in their menu.
Can someone suggests other Japanese restaurants that I should venture to try out their menu? I don't mind paying more as long as you get what you pay for. Thanks.
