I seldom eat beef. Mostly pork (most of dim sum is pork and i LOVE dim sum), chicken and fish. Lamb maybe 2-3 times a year and never anything else.

You must not have ever had good lamb. Good lamb shouldn't taste gamey at all, and will practically melt in your mouth. Average lamb will usually be somewhat gamey, and won't necessarily be particularly tender. I love beef (and, for that matter, I love pork, I love chicken, I love turkey, I love duck, and I love rabbit) but I'll take really good lamb over really good beef any day. The best lamb I've ever had was Welsh. It was practically orgasmic.
